Unlike the better known Kalamata olives, Amphissa olives come from the northern penninsula of Greece and are more popular in the old country than they are here. They are cured without red wine vinegar like Kalamatas and therefore have a lighter almost green olive type of taste. As the jar label says: "These olives have a mild and fruity flavor. When combined with lemon and fresh herbs such as parsley, rosemary or cilantro, they make a great topping for baked chicken or fish."
